De Apiciani libri fatis et codicibus exposuimus Giarratano in libello 'I codici dei libri de re coquinaria di Celio, Napoli 1912', Vollmer in Sitz.-Ber. d. Bayer. Akad. d. Wiss. phil.-hist. Kl. 1920 Abh. 6. pauca addenda videntur: codicem Caesenatem interim inspexit et contulit Giarratano, nullius est preti. nec maioris cod. Vat. lat. 6803 papyrius fol. 71-96, quem in Skutschii et Ihmii usum contulerat Samter. quae ad usum huius editionis maxime necessaria erunt, luculente digesta habes in indice codicum post hanc praefationem.
edidimus igitur et ipsos Apicii libros quos putant, qui tamen non pleni nec integri sunt, sed saeculo fere IVo vel Vo epitomati et vulgari sermone aliquatenus adulterati, et excerpta Vinidarii Gothi, qui saeculo fere VIo et ipse opusculum Apicianum tunc adhuc plenum suum in usum compilavit, magis etiam quam ille prior excerptor licentiis sermonis vulgaris indulgens. hos squalores et quidquid librarii insequentes similiter deturpaverunt detersimus quoad licebat: composita et aestimata sunt vulgaris sermonis vestigia apud Vollmerium l.l.
edidimus, inquimus, hos libros nec tamen ignoramus nos nihil fere agere potuisse nisi ut recenseremus ea quae tradita sunt abstersis maculis gravissimis, vere emendaturum non esse nisi qui plenam rerum scientiam habeat et tam excussis fontibus graecis et latinis quam experimentis factis cognoverit quid Apicius praecipere potuerit, quid re vera praeceperit.
plene attulimus varias lectiones codicum EV ita tamen ut discrepantias pure orthographicas praetermitteremus. restituimus contra Schuchium, cuius tamen numeros paragraphos in margine addidimus, dispositionem librorum per capita et capitula ab ipso ut opinamur auctore institutam.
indices adiecimus quales per haec tempora addere licebat, sperantes fore ut aliquando aliquis plene technica artis coquinariae verba graeca et latina colligat et explicet.
restat ut lectores moneamus optime de hac editione olim meritos esse _W. Studemund_ et _M. Ihm_ excutiendo codices E et V; lectiones codicis V nos exhibemus secundum photographa optima, in codice E reddimus collationem Studemundii nostrum in usum repetitam expletam correctam liberalissime a _W.M.
